I grew up in Hatch, New Mexico for 17 years in my life before I left join the Navy. I’ve been back a few times but back then hatch green chili wasn’t as famous as it is now. I have several friends I’ve given the freeze drive green chili to view and they love it. I. I use it and I love it. In fact, I just received about 12 or 16 bottles of the green Chile, I have given about eight bottles of it away, four bottles went to a restaurant that I go to that they really love it because they’re from New Mexico another went to a place called Burger boy in Murphy North Carolina. They tried and they like it and they keep a bottle in there so I can have green chili cheeseburgers when I go in there Hatch New Mexico green Chile is the best!!!

So I got this little bag of freeze dried chilies. It was disappointing to see just how little there was in the bag. I somehow expected more. I mixed some in with a pot of beans. I could have used the whole bag no problem but decided less was somehow more. Not sure how they will work. They just kind of got absorbed into the beans. I’ll probably use fresh chilies next time. Better mouth feel and chilies you can actually see are better than these freeze dried chilies. Probably won’t buy these again.

You just add a little water to the dehydrated Hatch green chilies, and they look like fresh green chilies. I like to scramble them with eggs and mushrooms. It’s a nice combination. But you can also cook them with potatoes and carrots. You don’t want to use too many vegetables or you will drown out the nice flavor of the roasted chilies. Or you can make any dish you want and the green chilies will add something to it!

Being that we moved from NM to WI, we've been looking to get our chile fix however we possibly can. The freeze dried chile is labeled as HOT but I would say it is mild at best. It's honestly kind of bland. I assume that it lost it's heat during the freeze drying. It still has a decent taste, but not quite what I was expecting. I was VERY hopeful that it was going to be amazing, because it is one of the least expensive chiles and I'm sure the most economical to ship. I am looking forward to trying the other products that we purchased.

I spent a good bit of time in NM during Hatch season and don't ever seem that satisfied with what I can buy in Central Texas in the frozen section. These hydrated nicely and so far I have just used a few at a time which is something I wanted. I make a slurry of some chilis, water, chicken buillon powder and some comino, zap it in the microwave and then add it to boil in bag cooked brown rice. Not too shabby.
