I paid for overnight shipping and peppers were shipped 2nd day. They arrived in a horrible, wrinkled condition. I was supposed to get a replacement shipment, but UPS has lost the shipment. I have emailed customer service about this and have not gotten a response. At this point, i just want a refund.

grew up in New Mexico...was glad to be able to access the real products again. These chilies grilled up great and we will now access to "downhome" flavors for months to come.

Great chiles for all-round family use, arrived in perfect condition
First, it was great to receive the chiles as promised, in great condition. Since they arrived late in the day, I left them on the counter overnight -- and before long the chile scent was wafting through the kitchen. The next day, I roasted them, saved a pound or so for immediate use, and froze the rest for later. That "immediate use" turned into two chile-laced batches of spoon bread that we took to a family campout & picnic, where they immediately disappeared onto everyone's plates. Since they were the G-rated mild variety, even most of the younger picnic goers were able to enjoy them; rich chile flavor without brain-melt heat. I'll be ordering more, as long as they remain available.

Hatch delivery day is like a second Christmas! We've roasted, stuffed and grilled our way through many of them so far. We love them!
I get these every year, but unfortunately this year they shipped them while I was away on vacation so by the time I got them at the PO Box they were all wilted and I had to throw the whole box away. I’m devastated, but I can’t afford another whole box I had no service where we were on a lake in Utah. I’m really bummed.

Ahhh the air was filled with the smell of chilies roasting!
Received my box of chilies and the aroma coming from that box was amazing! I fired up my barbecue to start charring them so I could remove the skins! Ahhh the air was filled with the smell of chilies roasting. There was a nice blend of both red and green chilies. After letting the charred chili sat awhile on baggies I peeled them and played them on cookie sheets to freeze them individually. Once frozen I put them in baggies. My favorite way to freeze them. I can just pull out what I need based on what I'm preparing. I ordered the mild ones this year, but they are quit hot! Ok with me because I love spice but I will not be able to use for potlucks or dinner with friends. I did have 8 chiles in the middle of the box that I had to throw out. They were spoiled!

I am so happy with my mild hatch chilies. I was so excited to get them. I roasted them. Then took skin off and i brined them and did a water bath. They turned out great and have for a later use. They smelled so good. Thank you. I added my fresh home grown onions to jars.

Fresh Green Chile's!
Why WOULDN'T you go fresh with the Hatch Green Chile Peppers!? My husband and I fired up our grill and had so much fun roasting the peppers and processing them to the freezer. It takes no time at all when you have a nice hot fire. I would recommend FRESH to everyone that has access to roasting them. You can roast them in your broiler too but the grill is much easier and faster. They tasted great on our hamburgers that evening too! An authentic Southwest Burger.

Easy to roast and peel. I followed the directions, from your website, on my Weber grill. The smell was sweeter than my poblanos. They are in the freezer, waiting for me to cook them up.

From what I was told that they were very good, meaty, and in most part mild. Was disappointed that FedEx picked up, transported to El Paso, loaded on a plane to Tennessee, and flown back to Arizona in 2 1/2 days. 2 boxes were ordered, 1 was delivered and the second box was delivered an hour later. That box was opened and the quantity was not the same as the first box. Missing over 5 pounds. FedEx should not be used again..

I never received it
I’ve sent several emails asking where my mild Chile is, and I got a note last week that said it hasn’t been picked. Well, it’s getting late in the year and I’m not sure I believe that I’ll ever get this order. I’m really disappointed because the roaster I use May not be working in his seasonal spot. And I don’t want to roast my own Chile. Waiting to see if I’ll actually get my order is causing a lot of stress. I’m not sure I would do this again with you guys. My first order was taken care of so quickly-as promised. The Chile was delicious. This time, as a return customer, I feel like I fell between the cracks… Please refund my order or take care of me and tell me something I can count on. It’s been over 2 weeks.

These were some of the best chiles we had in a long time! Our Fedex driver waited in her truck until I opened the door and picked up the chile. I ordered 5 lbs of the fresh mild green chile for the 1st time and it didn't take me long to realize I should have ordered more and even medium heat at least. I roasted then on my gas grill which works great and my next door neighbor ask what that wonderful smell was coming from my back yard. I can only imagine what chile roasting season smells like in NM. I thought the peppers tasted great. I roasted them within a couple days of them arriving at my house. I should say, however, about 20% of the peppers were mushy and/or moldy when they arrived at my house.

Excellent flavor. Key was watching tour roasting tips. The high heat and ice bath was the winning ticket. Came out awesome. You should put in you tips to wear gloves when peeling lol. Experience speaking... love the peppers thanks.

The box arrived as expected, with the sweet and pungent smell of peppers! They were firm, thick flesh and high quality peppers that roasted up very well and resulted in a very high yield. Chili's were the right amount of heat. Box arrived 2 weeks after notification chili's were shipped. Chili's on the bottom of box were starting to go bad. Black spots forming and some chili's were slimy.

Received our five pound order of large and heavy fresh from the field chile peppers. Very pleased with the quality and freshness, only wished we had ordered a hotter variety. We will definitely be ordering more before the season ends.

I ordered 10 pounds of Joe Parkers. The chiles arrived in great condition and still had that great crisp snap when you break them in half. The peppers were mostly 8 to 9 inches in length. There were about 50 chiles in the 10 pound box. The taste is excellent, definitely a great value and I got the pepper variety I like the most. Something you can’t normally get in the local grocery store.

This was the first time I ordered these, so did not know what to expect. Within minutes after receiving the 10lb box I ordered, I opened the box and sorted through the peppers for roasting. In my opinion, you have to assume that only 80% of the peppers will actually be good, not the full 10lbs. Some peppers were cracked (which I used to eat fresh) or starting to develop white mold (probably during shipping), some were red, and surprisingly a LOT were too small or immature to roast. I was expecting top quality throughout the entire box, but for the price was not overly impressed. I did try roasting the smaller ones, but the flesh was too thin and either couldn't be peeled or was not anything left after trying to peel. Of the peppers that I was able to keep, I will admit they were super delicious!

Hatch chiles used as versatile topping and condiment
I moved to Colorado from Chicago and I put them on everything now. They love their green chili out here. Put it on burgers, pizza, salad, pasta, eggs anything. I like it super spicy on burritos personally. I’m Chicago we have this condiment called Giardanera we put on everything. Similar concept.

Literally put them on anything. Thats what they do in new mexico. Sandwich? yes, burger? with beans? yes. As a sauce? Yes. Essentially you can easily treat it as a condiment rather than a pepper.

Canned Hatch chile alternatives vs frozen Bueno
Canned aren’t a _great_ option. If you can find frozen tubs I’d use them instead. Locally I can get both Santiago’s and Bueno; I’d highly suggest the latter if it’s available (and Bueno Autumn Roast would be ideal).
