Product Insights
This jarred Hatch chile from a family-owned Hatch Valley producer is the closest jarred product to fresh-roasted harvest chiles, according to a native New Mexican. It contains flame-roasted Big Jim podsβa protected New Mexico cultivarβcut into 1-inch chunks, cooked and jarred within 24 hours of harvest using only the chiles' own juice instead of water, with lime juice for acidity and shelf stability. The red-green blend pairs mild green pieces with hotter, sweeter red pieces, giving a medium heat that can actually run 4,000β8,000 SHU, and a drier, smoky, thick-textured topping that buyers use on eggs, tacos, burgers, and mac and cheese. Its notable tradeoff is a pronounced natural sweetness (no added sugar) that some find too sweet and adjust with salt, and shipping labels are occasionally damaged, causing delivery delays. At a sale price of $9.95 per 16-oz jar, it matches the per-jar cost of a 505 three-pack while offering a more authentic, chunky, fresh-roast substitute.
Verified claims

- Roast method
- Flame-roasted for 6β8 minutes until the skin blisters and pulls from the flesh
- Versus 505

- Roast process
- Propane-drum flame-roasted and jarred within 24 hours of harvest
- Maturity blend
- Red & Green Blend is one Big Jim harvest at two ripeness stages β green mild, red hotter and sweeter.
- Freshness

- Price context
- Sale price $9.95 sits within a dollar of 505's ~$9.76/16-oz; list $12.95.

- Sweet-salt balance

The chili is fantastic! But make sure to check the labels. Mine was cut off and said 3 then the street no. Itβs 53. Ups delivered to wrong property
Perfect amount of heat and flavor
This was our favorite so far@
I ate it on everything I could think of to eat it on is so good! Now I can't seem to find the big Jim hatch chili blend Right now. I had bought two jars and now they're empty after 2 weeks with just me eating it.
Great addition to food. I like what you have done here.
Great tasting chiles! Added some to Mac and cheese and it was amazing! Canβt wait to make a burger and top it with these Chiles!
YESSSSS!!!! A clean, healthy product!!! No commercial βpreservativesβ. PERFECT!!! Thank you SO much Randy and Carol McMillan for the wholesome goodness found in your βBig Jim Red and Green Blendβ! If you can get your formulation person to stabilize all the rest of your products with lime juice and salt especially an unrefined salt you will have an exemplary product line but this is an absolutely FANTASTIC start. Thank you again. I will be ordering more of this product for certain!!!! And telling my friends about it.
Highly recommended!
Love it. Itβs like the ad I saw - thereβs no water to dilute the chopped chile. Itβs fantastic. I used to live in Albuquerque and like many locals, Iβd roast, portion and freeze my own green chile every fall. Gotta say though, Iβve gotten lazy and started using some of the bottled products for convenience. Tried many of them and have to say this oneβs the best. Iβll be a regular customer now. Thanks for the great product.
Goes well with all my favorite dishes
Big Jim Red Green Blend
This Chile is delicious!!!! I divide the jar up and freeze into small packets to use as needed when I make Chile. It freezes perfectly. I am buying more! YUM!
