Product Insights
This jarred Hatch green chile from The Fresh Chile Company delivers a fresh-roasted flavor via direct flame roasting, using only Machete chiles, lime, salt, and garlic. It's mild at about 500 SHU but with a real heat that can be too much for spice-averse buyers; its sweetness comes from flame-roast caramelization, not added sugar. The undrained chile works straight from the jar in queso and sauces at specific ratios, and shines as a smash-burger topping with cheese melted over it. Listed at $12.95, and even at a $9.95 sale price it costs about $3 more per jar than 505's per-jar case price — a premium tied to its drier, smokier cooking profile and scarcity from a 30-day packing window after a 15% smaller 2023 crop, which also explains its out-of-stock status. Buyers, including a native New Mexican, call it the closest jarred Hatch to fresh-roasted, and gift recipients often ask for more.
Verified claims
- Vintage
- Buyers call it the only jarred Hatch chile close to fresh
- Ingredients
- Packed only from roasted Machete chile, with lime, salt and garlic as the only additives
- Heat
- About 500 SHU — mild but real; one spice-averse buyer calls it too hot.
- Value
- At $9.95, the 16 oz jar costs about $3 more than 505's per-jar case price.
- Cooking ratios
- No draining needed; ¾ cup chile per 2 cups queso, 1½ cups per 3 cups sauce.
- Burger method
- Standard smash-burger build: 2–3 tablespoons per patty, cheese melted over the chile to hold it in place.
- Flame roasting
- Direct-flame roasting, not a broiler, creates the sweet-smoky flavor that carries this mild jar.
- Acidification
- Acidified with lime juice alone to pH 4.6 or below, as FDA requires for shelf-stable chile.
- Scarcity
- Out of stock: a 15% smaller 2023 crop, packed in a 30-day window, makes this vintage finite.
- Provenance
- The brand began when a father swapped dried chile for fresh Hatch; jars are packed straight from each harvest.
- Market position
- Pitched to chefs as the drier, smokier bold cooking chile, and priced about $3 more per jar than 505's six-pack
- Sweetness
- The sweet note is flame-roast caramelization, not added sugar — buyers find it noticeably sweet.
- Gift appeal
- Gift recipients ask for more, and one fan has gone through 10 jars.
- Authenticity
- A native New Mexican calls it the closest jarred Hatch to fresh-roasted.
- Burger use
- Buyers call the smash cheeseburger the jar's best use.
- Price premium
- At the $9.95 sale price, about $3 more per jar than 505's six-pack case.

I love everything I order from this company! I took a couple jars over to England with me on vacation and they gobbled them up and now I have to send them more.
Delicious! Mild heat.
Best green chilies I’ve ever tasted and great customer care
There is nothing better than fresh Hatch chili
Ordered this in mild - still just a bit too spicy for me - guess I’m spice adverse. I do love mild fresh toasted hatch chilies!
Been waiting for this! Tried the green 575 on Smash Cheeseburger. So good!!!
Yummy in my tummy
Highly recommend!

User loves 575 sauce and uses it on burgers
575 is amazing. The ads got me on FB. Super delicious, unique flavor and very fresh. You can eat it with a spoon by itself but really good on anything. I’ve probably gone through 10 jars. Here’s a 575 burger I made. Do it!

Goes with the name, but they really are the freshest you can get outside of just roasted.
