Product Insights

This 2023 Matador Hatch Green Chile (XHot) from The Fresh Chile Company captures a single Hatch Valley harvest in a thick, chunky jar—no watery sauce—with 1-inch Matador pieces running about 15,000 SHU (a 7–8 on the heat scale). The Matador cultivar is an NMSU-bred line descended from the 1913 New Mexico No. 9, and the Hatch name is legally protected for valley-grown chile; a native New Mexican calls it the only jarred Hatch close to fresh harvest. The recipe is pure: four ingredients, lime juice acidified below pH 4.6 for safe canning, no citric acid or preservatives. It works as salsa, cooking ingredient, or finishing condiment—heat mellows when simmered—and pairs with posole, carne adovada, and stews. The 2023 jar is a close-out at $9.95 versus the 2024 successor (575 Special Reserve, same recipe, cut, and heat), but it is currently out of stock, and buyer-reported ordering reliability is a real caveat: some orders have been missed or misdelivered, with shipping costs rising. Once opened, the label says enjoy within 7 days, though the Q&A allows a few weeks; unopened jars are shelf-stable for two years.

Verified claims

Origin
The Hatch name is a legally protected claim to valley-grown chile under New Mexico's 2012 labeling law.
Heat
Matador XHot runs about 15,000 SHU — roughly a 7–8 on a 1–10 heat scale.

Cultivar lineage
Matador is an NMSU-bred cultivar, descended from the 1913 New Mexico No. 9 release.
Provenance
Hatch on the label is a protected regional origin, not a generic pepper style.
Hatch sourcing
Single 2023 Hatch Valley harvest — a native New Mexican calls it the only jarred Hatch close to fresh.
Ingredient purity
Four ingredients only: Hatch green chile, lime juice, salt, garlic — no citric acid or preservatives
Acidification

Cooking uses
Buyers use it as salsa, cooking ingredient and finishing condiment — on eggs, hash browns, pizza, burritos and in stews.
Family heritage
One 30-day Hatch harvest per year, from a fifth-generation New Mexico farming family that began with holiday gift jars.
Ordering reliability
Buyers report missed or misdelivered packages, plus higher shipping costs than before.
Authenticity
A native New Mexican buyer calls it the only jarred Hatch close to fresh harvest.
Fulfillment
At least two buyers report their orders lost or delivered to the wrong address.
Flavor

Vintage
2023 jar is a single-harvest close-out at $9.95 vs $11.95 for the 2024 vintage.
Successor
575 Special Reserve is this 2023 jar's 2024 successor with the same recipe, cut, and heat.
Shipping
A repeat 575 buyer reports Fresh Chile Co's shipping cost rose on their last order.
Cooking behavior
Heat mellows when simmered; buyers report using it from eggs to stews
Close-out value
2023 jar matches the 2024 575 Special Reserve recipe at $9.95 vs $11.95

Grower notes and cooks pair it with posole, carne adovada, and long-simmered sauces.
Shelf life
Unopened jar is shelf-stable for two years.
After opening
Label says enjoy within 7 days; Q&A allows a few weeks.
Delivery reliability
Two of 28 reviews report packages lost or misdelivered; tracked shipping is the only real protection.

I love heat! And this fits the bill, though it’s not just insane heat to punish the consumer, but has an awesome flavor that comes on as you eat.

  • Versatile uses for the jarred chile

Anything you want green chili on or in. My faves are green chili stew, burritos slathered in green chili gravy, French fries covered with green chili gravy and cheese, green chili corn dogs are sublime, omelets, homemade bread, grits and green chili, pizza, and on and on. Some even like green chili ice cream . If you’re referring to the size of the jar, freeze it in smaller containers.

  • Fresh Chile Company green chile praised but shipping costs frustrate

Never tried 505 but I've ordered twice from the fresh Chile company. I tried three red, and three of the green medium heats of the 575. They are both good but the red doesn't sit well post gallbladder removal. I've reordered 12 of the green, down to my 3rd to last bottle now, and I love the green. I am however irritated about the shipping increase from my last order.
