Product Insights
Fresh Hatch Red & Green Chile Blend 'pinto' peppers are the mail-order version of New Mexico's Christmas order: a half-green, half-red box of authentic Hatch Valley chiles harvested late September to early October. Grown in the Hatch Valley's alkaline soil at 4,000 feet with Rio Grande water, the cultivar mix—descended from Fabián García's 1913 New Mexico No. 9—delivers a brighter, firmer, unacidified flavor than jarred California Anaheim blends, along with 4–6 times the vitamin C (180–255 mg per half-cup). The core promise is genuine Hatch freshness and taste, but the tradeoffs are real: the pods are perishable (roast within days), seasonal (only the pinto window), conventionally grown (not certified organic), and sourced without Hatch Chile Association certification. Oven roasting loses 20–30% volume, and only cooked chile freezes well; sorting on arrival is recommended, though spoilage is covered. The payoff is a lower price per pound than jarred blends, plus the ability to make green chile stew, chile rellenos, and Christmas half-and-half enchiladas.
Verified claims
- Terroir
- Hatch Valley's alkaline soil, 4,000-foot elevation and Rio Grande water make a flavor that can't be copied elsewhere
- Heat
- Red pods in the mix run 25–50% hotter than green; heat also varies by pod and season.
- Fresh vs canned
- Fresh Hatch pods instead of canned California Anaheim: no added acid, and 4–6× the vitamin C of jarred chiles.
- Organic status
- Not certified organic — these are conventionally grown chiles.
- Flavor
- Fresh pods are unacidified and single-roasted, keeping a brighter flavor and firmer bite than jarred.
- Nutrition
- Fresh green pods carry 240–340 mg vitamin C per 100 g, 4–6 times an orange.
- Hatch authenticity
- Genuine Hatch Valley chile, not the California Anaheim in most jars; red and green are the same plant.
- Value
- $29.99 buys 5 lb at $6.00/lb, vs $12.60/lb for a jarred red-green blend.
- Seasonality
- In stock only during the late-September–October pinto window, not year-round like jars.
- Christmas order
- Half-green, half-red box is the mail-order version of New Mexico's Christmas chile order.
- Yield
- A 5-lb box roasts down to about 3 lb of peeled chile.
- Roast method
- Oven-roasting at 400°F loses 20–30% volume — less than flame-roasting.
- Freshness
- Roast within a few days; cooked chile keeps 12 months frozen, raw pods don't.
- Perishable risk
- Spoiled chiles are replaced or refunded with photo proof within 30 days.
- Fresh vs jarred
- Fresh Hatch Valley pods, with no added acid or preservatives, unlike jarred blends.
- Storage
- Keep refrigerated in a breathable bag and roast within a few days of arrival.
- Freezing
- Freeze only roasted, peeled, chopped chile — raw pods thaw mushy.
- Arrival inspection
- Isolated soft spots can develop in transit, so sort pods on arrival.
- Arrival experience
- Buyers report on-time delivery and isolated spoiled clusters; sort on arrival.
- Spoilage coverage
- Spoiled pods are replaced or refunded within 30 days with photos.
- Roasting
- Oven roasting loses 20-30% volume; flame roasting 35-45% but concentrates smoke.
- Breeding lineage
- All Hatch chiles descend from Fabián García's 1913 New Mexico No. 9
- Cultivar mix
- Hatch is a cultivar mix (Big Jim, Sandia, Lumbre), not a single variety
- Provenance
- Sourced from Hatch Valley farmers, without Hatch Chile Association certification.
- Harvest window
- Green and red pods are the same plant, harvested late September to early October.
- Vitamin C
- A half-cup serving of fresh Hatch chile provides 180–255 mg of vitamin C — 2–3 times the daily value.
- Recipe uses
- Box supports green chile stew, chile rellenos, and Christmas half-and-half enchiladas.

I was very disappointed in the heat level
I was very disappointed in the heat level. Given the heat from your jarred peppers and sauces, I was expecting your "Medium-Hot" chiles to produce a year's supply of cowboy candy. Sadly, they were so mild that I was too embarrassed to bother giving any as gifts. PLUS, some were already decomposing when they arrived and none of them could be called "crisp", so they'd clearly been "off the vine" more than a couple of days.
