Product Insights
The Fresh Chile Company’s Hatch Green Chile Pistachios deliver a rare taste of New Mexico’s Hatch Valley in a $6.95 4-oz jar that undercuts rivals starting at $14.95, with a bright, flame-roasted chile heat that is mild (3–4/10, below jalapeño) and free of dried pods or added sugar. Grown in New Mexico’s 100°F+ climate from a region producing just 1% of U.S. pistachios, the nuts are notably crunchy and coated with a loose, messy chile dust that invites a hands-on, lick-the-shell-before-cracking ritual but can be a dealbreaker for mess-averse eaters. Shelf-stable for up to a year, the SIAL Gold Innovation Award-winning jar (also featured by Cowboy Kent Rollins) works as an in-shell patio snack with white wine, in salads, brittle, and Romesco, and packs 37% DV of vitamin B6 per ounce plus lutein, zeaxanthin, monounsaturated fat, and a low glycemic index, with potassium that offsets the salty coating; it is a tree nut, not certified gluten-free or kosher, but a region-specific gift from a scarce harvest.

- Format
- In-shell pistachios with a loose chile coating that rubs off — buyers call it messy.
- Crunch
- Reviewers report the nuts are very crunchy, with crisp kernels that stay crunchy under the loose seasoning.
- Mess
- The chile seasoning is a loose dry powder that dusts fingers and surfaces, and one reviewer finds the mess outweighs the flavor.
- Culinary use
- Recipe writers feature these in salads and in brittle, where the chile heat finishes on the back end.
- In-shell ritual
- Buyers lick the seasoned shell before cracking — a slow, hands-on ritual.
- Price value
- At $6.95 the 4 oz jar undercuts Heart of the Desert's shelled pistachios from $14.95.

- Entertaining use
- Buyers report serving it as a mild-heat, in-shell patio bowl with white wine.
- Gifting
- A New Mexico-grown jar from under 1% of U.S. pistachio supply is a region-specific gift.

- Culinary uses
- Published recipes use these pistachios in green chile brittle, Romesco, and goat-cheese salad.
- In-shell prep

- Nutrition
- An ounce gives 37% of daily vitamin B6 plus lutein, zeaxanthin, and monounsaturated fat.
- Blood sugar
- Low glycemic index — it won't sharply spike blood sugar.
- Sodium balance
- Per-ounce potassium beats half a banana, offsetting a very salty coating.
- Growing climate
- New Mexico's 100°F+ summers mean fuller kernels and fewer empty shells

Mildly spiced and very delicious!
Good spice
Very good!
Super taste!
Even the shells beg to be cleaned
Disappointed
These pistachios were very bland with basically no flavor. Could I get a refund or credit to purchase something else?
Excellent
Very salty pistachios. Very crunchy and just the right amount of seasoning.
5 Stars
I bought the 16 oz. package as a 2020 Christmas gift for my parents. They loved them - thought the green chile pistachios tasted wonderful. I also bought for them the green chile pecans, red chile pecans, sweet hot pecans, praline pecans and red chile pistachios pistachios. They very much enjoyed all of them but were not sure if they liked the green or red pecans versions. I plan to buy these again - hopefully for myself this time...

Too messy, the taste that the chilli powder lend is not enough to offset the mess.
