Product Insights
Hatch Green Chile Chicken Tamales (FCC - HCS - Frozen) are a $70 frozen dozen (about $5.83 each) that promise an authentic New Mexican holiday shortcut: handmade in small batches from stone-ground masa and Hatch Valley green chile, husk-steamed for a rustic exterior, and produced by a USDA-inspected Deming, NM plant since 1978. The core appeal is a quick (8–12 minute steam) taste of a traditional family recipe without an all-day tamalada, with mild-to-medium heat and a wheat- and dairy-free profile by ingredients. The main tradeoff is inconsistent execution—buyers report mostly-masa tamales with almost no filling, bland seasoning, and variable chile heat—which undermines the per-tamale value and often requires salsa, cheese, or red chile to elevate; husks may stick, reheating needs care (pull at 165°F, keep husk on for moisture), and frozen shelf life is best within 3–6 months.
Verified claims
- Hatch chile
- Hatch green chile filling ranges 1,000–8,000 SHU vs Anaheim's 500–2,500.
- Filling consistency
- Buyers report mostly-masa tamales with almost no filling and bland seasoning.
- Husk-steamed exterior
- Corn-husk steaming gives a rustic exterior; husks may stick.
- Per-tamale value
- At $70 for 12 (about $5.83 each), a sparse-filling bag is poor value.
- Rating distribution
- 3.96-star average: 63% five-star vs 17% one-star.
- Doneness
- Pull tamales at 165°F, or when the masa pulls cleanly from the husk.
- Husk handling
- Keep the husk on for moist reheating, and dry heat chars the outside for a crisp crust.
- Authentic recipe
- Hoja-wrapped, stone-ground, Hatch-chile tamales from Amigo's Mexican Foods, USDA-inspected since 1978.
- Seasoning
- Buyers report some batches are mostly masa with almost no filling or seasoning.
- Production provenance
- Produced by Amigo's Mexican Foods, a USDA-inspected Deming, NM plant making New Mexican food since 1978
- Recipe and craft
- Handmade in small batches from an authentic New Mexican family recipe and stone-ground masa
- Hatch provenance
- Hatch is a Rio Grande valley designation, not a variety; its chiles run 1,000–8,000 Scoville units
- Holiday fit
- Steams in 8–12 minutes for a Christmas Eve table, replacing the all-day tamalada.
- Authenticity
- Corn-husk wrapped dozen from a New Mexico kitchen since 1978, with Hatch Valley chiles.
- Cooking
- Frozen tamales cook through by steam, oven, or Instant Pot; pull at 165°F.
- Taste
- Buyers report bland or dry tamales, with some preferring grocery-brand.
- Hatch origin
- Hatch names a 40-mile New Mexico valley; no per-batch origin certification is shown.
- Filling density
- Buyers report inconsistent filling — some tamales come with almost none.
- Fulfillment timing
- Frozen at 0°F, the tamales keep best quality for 3–6 months
- Food safety
- Made by a USDA-inspected New Mexico producer since 1978
- Wrapper tradition
- The corn-husk wrap continues a 10,000-year-old wrapped-food tradition.
- Heat level
- Mild-to-medium Hatch chile; the Hatch range is 1,000–8,000 SHU
- Heat consistency
- Some buyers report bland, mostly masa tamales with little chile heat
- Chile flavor
- Earthy roasted-nut green chile flavor with a savory-mineral edge
- Gluten/dairy fit
- Stone-ground corn-masa tamales with Hatch chile and chicken are wheat- and dairy-free by ingredients, but not certified.
- Nutritional reliability
- A 170-calorie single-tamale serving is consistent, but filling and protein content vary by batch.
- Freezer shelf life
- Best quality within 3–6 months frozen at 0°F; safe beyond if kept frozen
- Reheating
- When frozen, steam or oven for 18–22 min; a 45-second microwave defrost first avoids dry masa
- Serving pairings
- Buyers find them bland unadorned — serve with salsa, cheese, red chile, and holiday sides like posole.
- Price per tamale
- A $70 dozen runs $5.83 per tamale, undercutting the $85 dozen at Hatch Chile Store.
- Shipping
- Ships with dry ice; buyers call shipping expensive and one order never arrived.
- Use-case value
- Buyers see the $70 dozen as a holiday or taste-of-home buy, not a crowd meal.

Tamales
Tamales were great! We had them with green chili for Christmas Eve Will look forward to our next batch.
Just real good eating - love em
Chicken Tamale’s
Your tamales are always delicious! We share with friends so they will order too.
Really good!
Love tamales
Enjoyed the hatch green Chile tamales. Easy to heat and eat. Was a bit put off when I saw they were made in Ohio. Didn’t understand that.
Delicious Hatch Green Chili Taste
I thought these Hatch Green Chili Chicken Tamales tasted delicious. I felt like I was back home in New Mexico. My tamale had a good balance of chicken to masa and the green chili flavors were excellent.

The masa sticks to the husk
Just like we get in NM
We eat tamales regularly in NM and these compare favorably! They were shipped and remained totally frozen, to Colorado, in early December. Easy to separate into 3 units so we could repackage them for 3 meals. And when we ate them last night -- YUM. Served with red and melted cheese, spanish rice. I think they have enough filling, the masa is tender, and the heat is about New Mexico Medium. Just about perfect, tho expensive when shipping.
Hatch Green Chile Tamales
The taste of the Hatch Green Chile tamales was very good, but to make the tamales excellent, more filling needs to be put in the tamales. Just not enough filling.
Tamales
Great tamales
Hatch Green Chile Chicken Tamales
It was way to expensive and not recommend buying . It had very little chicken for the price. Very disappointed !
Comfort Food!
I love tamales going into Christmas, and these are tasty and delicious! They have a wonderful corn flavor and plenty of chicken. I also love how easy they are to prepare for a quick lunch or dinner— I was steaming them, but I find they are equally good heated for a couple minutes in the microwave. I may have to order more, and it’s not even December!

Tamales were good
The tamales are very good. The chili rellenos didn’t have cheddar cheese as advertised, but we’re ok and edible. The chimichangas were not good. I won’t eat another one they’re horrible.
Delicious with a kick!
So easy to prepare in the steamer and so good! I made a tomato, corn & cotija salad and it was the perfect summer meal!
Not worth the money
They were not very good. I took them to a family event and no one liked them. They were dry, 90 percent masa and like one little chili. Very disappointing. I took some Pedro tamales from HEB and everyone thought they were much better.
Scrumptious Chicken Tamales
These tamales are exceptional. Sweet masa, tasty chicken. Not too much masa and plenty of chicken. Perfect we say. Oh yeah, I’m reordering. These are simply the best. Janet
Not at all what I was expecting
Very disappointing
A reminder of just how good New Mexican food can be!
I bought these as a surprise dinner for my husband as we moved from NM to Ohio about 20 years ago and miss the food. I cannot begin to explain just how good these are! I opened my first tamale and the second the aroma wafted out I knew they were about to be amazing! I was not wrong. The chicken was tender, the masa was so light and flavorful and the green chile was like icing on a cake. While it had a nice bite to it, it was not too spicy. I can see myself ordering these on a regular basis (I actually signed up for the subscribe and save). If you are on the fence about ordering these, get off and order them already, you won't regret it!
Real Tamales
I am from Texas and live in the Northeast. Finally real tamales. Thank you for the delicious reminder that good Mexican food still exists.
No filling! Not made by Fresh Chile Co.
Almost no filling in these 2 dozen tamales (green and red). Less than 1 tiny teaspoon of filly which was all green sauce for the chicken ones ( no chicken). Very disappointing for $119. Not made by Fresh Chile Company.
Good and Easy to Prepare
Our only disappointment was that the "corn husks" seemed to be manufactured material made to look like the natural product. As far as the taste - it was as good as we expected. Though the cooking instructions are a little vague. I mostly thawed them and then cooked them at 350 degrees in our microwave convection oven, turning every 10 mins and checking the temperature at 20 mins. At 30 mins, they had easily reached 160 degrees.
Merry Christmas
I order these for me and my wife. They are saved for special occasions like the Christmas holiday. The favor and taste associated with these scrumptious tamales. Thank you so much for putting your heart into them.
Delicious!
The Masa is light and flavorful and just the right amount spice!

Bland and inauthentic according to top comment
They are not authentic at all and are barely seasoned. Only way to enjoy them is if you add your own seasonings! Super bland!
