Driest tamale I've ever had. They we're tightly packed in a bag that made them all square. After warming and unrolling the tamales from what looks like a square piece of paper it was a pile of dry crumbly masa and the pork had very little red chile taste. The next ones I removed the faux corn husk first and they were dry before warming but stayed together and I poured some melted butter on them after warming to add moisture. The entire dozen were identical. The tamales arrived partially frozen as the plastic bag holding them and the dry ice was not tied shut (dry ice had evaporated ) and the bagged tamales were outside the bag.

To have a tamal that has all the tastes associated with the simple ingredients and not be heavy from hydrogenated fats is a treat. The recipes ability capture authentic tastes of tamale history. I think the family kept the tamales simple and tasty. We like them and fortunate enough to include the treats in our regimine a few times though the year on different occasions . Steamed and Hot.....Yum....and w/ eggs on top for a higher protein meal.

I ordered the red chile pork tamales, and they were delicious. They arrived frozen and in great condition. I opened the bag and pulled out two which was easy as each tamale was wrapped in corn husk. I microwaved them and with a little sour cream and some salsa I gobbled them down. They had great taste and were very consistent from tamale to tamale.

These are the best tamales I've had in many years. The flavor is exceptional! However, there is hardly any meat filling in them. There is a little tiny bit of meat in the center with both ends (about 2/3 of the total tamale) being nothing but masa. I will not purchase again simply because of the lack of filling. But, spot on with the taste!

Could be great tamales. We really liked the masa & the favor of the pork. The problem is the quality control. You don't know what your going to get. We've eaten 6 of the 12. One had enough filling for 2 tamales, three had maybe 2 or 3 shreds of pork and two were just right. You just don't know what you're going to get.
