Hatch chiles are my absolute favorite! However the box I received were not all fresh; several were received moldy. Disappointed.

Wonderfully hot and tasty
The peppers arrived as expected. There were only 4 that were bruised so we tossed those. The rest were roasted and a few were used to make a delicious cold salsa. Definitely ordering for next season.

Hot green chili pods
We purchased 40lbs of the hot green chili. I must say it was in the best condition of any chili received from where we had ordered in the past. We live a long way from NM (lived there for 58 years) in Myrtle Beach, SC and couldn't believe that the chili looked as good as when it was picked.

I told the to person wo whom I spoke that please do not ship until after Sept. 12, as the family would be out of town and the package would sit on their doorstep for days in the hot, humid Georgia weather. Once again I was assured that this would be noted. Last Monday, September 4, I received a notice that the package had been delivery had arrived at the Georgia address. Fortunately the family had a friend who volunteered to check on the package and move it inside. (I was not concerned that a "Porch Pirate" would steal the package, because they would not even know what "those green things" were, and would most likely return it! (LOL) The friend stopped by the house in Georgia and found nothing there: imagine my surprise that at the moment she called to say she found no package, my doorbell rang and there was the chiles!! I will now have to reship these to Georgia and there is no telling in what condition the fruit will be! I have ordered from this company previously and have had no issues. I realize that my original mistake of giving my address for delivery most likely came to play in all of this, but I did reach the company and was assured the delivery would be sent to Georgia, after Sept. 12 in time for the family's return. I know this is long, but I needed to vent!

This was my first time ordering and chose The Hatch Chile Store as they were the most reasonable priced, had great customer service and sent my Chiles as promised. The only disappointment we had was in the size of the Chile but they were good and yes they are hot. My husband at this moment is making Chile Rellenos with some of them . Delicious!

I ordered a 25 pound box of green chiles. They arrived in Northern Colorado in great shape with no shipping damage. They smell so good when you roast them. They came out delicious and spicy!
Best Green Chile Peppers Ever!
Arrived in timely manner, well packaged and fresh. We live in Georgia so this was no easy feat. Roasted on gas’s grill 500-550 degrees, dropped in ice water and pealed. Turned out great kept some out to eat froze rest in vacuum seal bags. Thank you!
Great taste, bad yield
At first look I was a little disappointed. Many of the Chiles were cut up on harvesting and rotting. Others were rotting where the stems were chopped off. After washing and sorting I had 13 unusable. About 2lbs. However, I couldn't wait to try while roasting them and the flavor was fantastic! I didn't think to take pictures as I was throwing the bad ones in my garden compost chopped up.

2023 Fresh Chile
My order arrived as promised in excrllent condition. Roasted on my grill & put in an ice water bath (thanks Randy!) Before freezing. Picked out 4 biggest to peel for Chiles Rellenos. Excellent!

Not as good as expected
First time ordering fresh green Chile from The Fresh Chile Company and was excited to not have to make a trip over to New Mexico to get chiles. Have ordered other items from The Fresh Chile Company and enjoy their products but the fresh green chile did not live up to expectations. Since we pre-ordered our chiles we thought they would be fresh, however, we found a that our chile was somewhat wrinkled and some that were mushy and leaking juice all over. We realize these are fresh chiles and were shipped in hot conditions but it felt like these had been picked and sitting around a while before being shipped. We felt like it might have been worth a trip back to Albuquerque, Santa Fe, Hatch, etc. to buy some direct. We appreciate the option to pre-order and save time but not sure if we got the freshest chile like we thought we would get. Bummer because we were excited to get fresh chile this year. Will continue to order other products here but will think about ordering fresh chile in the future.

I only had 2 peppers that were bad out of 25 pounds. I roasted them right away for use all year. It looks like it was a good year good sized peppers too. They are spicy also.

Chile bite is perfect! Love it. I was raised in Chama and remember grandma roasting the same and the smell and taste takes me back to those days, so there is more to the Chile experience that meets the eyes. My chiles were not hot as I had ordered. I received alot of broken chiles, very small chiles. I was disappointed 😞 I also ordered on 9-01-22 but did not receive my order of chiles until one month later. Also paid for express shipping. How can I improve at my end? After buying green chile from the Hatch Chile Co. for many years and not being totally satisfied with their chile, I decided to try the Fresh Chile Co. I roasted them the day I received them. I must say that they were more fresh, meatier and tastier than the ones from Hatch Chile Co., and my experience with the customer service representatives at Fresh Chile was bar none. Because of these things I intend to purchase from Fresh Chile from now on.

What makes Hatch green chile better than any other type of green chile such as Anaheims? It is the climate and soil in Hatch, IT IS PERFECT FOR PEPPPERS. The dry climate allows the peppers to grow angry with heat and full of flavor. As a local Hatch native, you can absolutely tell the differences in peppers, so in my humble opinion actual Hatch Chile peppers do have major differences between Anaheims.

Sandia variety characteristics and traditional hot chile
Sandia is another super famous variety, especially for red chile. It is the traditional hot chile in New Mexico, but it is less common to use for chile roasting in recent years than another variety, known as Ms Junie. Sandia is still the main chile to tie into chile ristras though!

Seed sellers offer varying heat strains
"New Mexico style" probably means Hatch chiles are the main pepper. Seed sellers have different strains of hatch-type that vary in heat.
