Fresh Hatch Green Chile Peppers (Medium) – Big Jim & Charger
Fresh Hatch Green Chile Peppers (Medium) are seasonal, freshly harvested green chile peppers of the Big Jim and Charger varieties grown in Hatch Valley, New Mexico, rated at 2,500–4,000 SHU medium heat and sold in approximately 5 lb (Small), 10 lb (Medium), and 25 lb (X-Large) quantities. They are used whole for roasting and peeling, stuffing for chile rellenos, grilling, or blending into salsas, enchilada sauces, stews, and dips; standard preparation is blistering the skins over high heat, steaming in a covered bowl or sealed bag for 10–15 minutes, then peeling and removing seeds. Peppers ship fresh early in the week (typically Tuesday) and are best refrigerated and used promptly or roasted, peeled, and frozen, and customer reviews describe thick, meaty walls with easy peeling, noting that heat level runs moderate and that roasting is required before eating.

Product Insights
Fresh Hatch Green Chile Peppers pairs Big Jim and Charger, two NMSU-listed New Mexican-type cultivars from the legally protected Hatch Valley, where alkaline soil and cool nights give them a sweet-earthy flavor. Big Jim’s thick-walled, record-size pods are bred for chile rellenos—the calyx pulls off cleanly, pods char and blister in 6–8 minutes without burning through, and they freeze with meaty texture intact. Charger, slightly hotter, brings lively contrast for stews and sauces. The box is a fixed blend, so heat may vary across the medium 2,500–4,000 SHU rating, and roasted pods must be peeled because skins toughen and raw pods irritate. Green pods turn red within days of picking, so roasting on arrival is essential; a 10-lb box yields 70–90 whole pods with minimal spoilage, and the large Big Jim pods (up to 33.75 cm) work for whole stuffed preparations. This is the authentic Hatch chile experience, centered on the region’s signature cultivars—with the caveat that you’re committed to roasting and peeling before they reach your table.
Verified claims
- Breeding lineage
- Big Jim is the 1975 NMSU cultivar that still holds the Guinness record for largest chile pod
- Relleno anatomy
- Bred for chile rellenos — the calyx pulls off cleanly and pods keep intact meaty walls
- Charger complement
- Charger, the second variety in the box, runs a bit hotter than Big Jim for stews and sauces
- Terroir
- The sweet-earthy flavor comes from Hatch Valley's alkaline soil, elevation, and cool nights, not just the cultivar
- Provenance
- Hatch is a legally protected growing region, so the label guarantees New Mexico-grown peppers
- Big Jim
- Big Jim, bred for Hatch Valley, shows the strongest terroir expression and freezes best of the major varieties
- Price per pound
- At the $29.99 sale price, the 5-lb box is about $6.00/lb versus $8.00/lb for comparable Hatch chiles
- Freshness window
- With Tuesday-Wednesday shipping and green pods that turn red within days, roast them on arrival
- Cooking uses
- Charger's thick walls make it ideal for stuffing, frying, and stews.
- Varietal identity
- Charger is an early-season, NMSU-listed New Mexican-type cultivar.
- Blend composition
- Every box is a fixed Big Jim–Charger mix; only box size varies.
- Variety routing
- Big Jim whole pods for chile rellenos; Charger chopped into stews and sauces
- Cooking use
- Blister and peel before eating; roasted Hatch tops eggs, pizza, burgers, and sauces
- Roast window
- These thick-walled pods roast 6–8 minutes at 400–450°F until skins blister
- Peeling
- Blister and peel the skin before use — unpeeled skins toughen and raw pods irritate
- Stuffing
- Thick walls make both pods sturdy stuffers; Big Jim's stem pulls free cleanly for whole-pod rellenos
- Pod size
- Big Jim pods reach 33.75 cm, big enough for a whole stuffed chile
- Peelability
- Calyx pulls off by hand; buyers report roasted skins peel easily
- Roast durability
- Thick-walled Big Jim pods char 6–8 minutes without scorching through
- Heat
- Pods within one box vary in heat, and this season's medium crop runs at the low end of its 2,500–4,000 SHU rating.
- Harvest freshness
- Mild and medium Hatch varieties ripen first; green pods turn red within days of being picked.
- Freezer texture
- Big Jim's thick walls keep roasted pods' meaty texture through freezing.
- Harvest timing
- Medium Big Jim and Charger pods are picked from early August to late September, peaking in the last two weeks of August.
- Late-season quality
- Cleanest, best-graded pods arrive in September and early October, after early wind-burn grades out.
- Pod count
- A 10 lb box averages 70–90 whole pods, about 7–9 per pound.
- Variety mix
- Ships as a fixed Big Jim–Charger blend; only box size is selectable.
- Arrival quality
- Buyers find at most one rotten pod per box, and soft-spot pods are sorted out and used first.
- Roasting
- Pods must be roasted and peeled before eating; the seller's free video shows the process.
- Hatch identity
- Hatch is a legally protected growing region, not a variety; Big Jim and Charger are New Mexican-type cultivars.
- Seasonality
- Green pods turn red within days of picking, so roast promptly.
- Harvest season
- Medium Hatch matures early; season peaks in late August, with quality best in September.
- Authenticity
- The Hatch label is legally reserved for chiles grown in New Mexico.

Roast at home for burritos, enchiladas, and chile rellenos
Roast these Hatch chiles on the grill or under the broiler until the skins blister, then peel them for burritos, enchiladas, or casseroles — the merchant's suggested way to capture classic Hatch flavor. The merchant pitches the thick walls as ideal for home roasting and Big Jim's large pods as perfect for stuffing into chile rellenos, while reviewers describe the peppers as fantastic, especially after roasting. Roasting soon after they arrive and sorting the batch first can matter: one customer who waited three days found several peppers had already started going bad, and bulk orders have occasionally included a rotten one.[2]
Roast and freeze to stock up on Hatch green chile
These seasonal chiles are used for stocking up: roast them when they arrive and freeze the roasted peppers for later. The merchant recommends roasting, peeling, and freezing so the taste of Hatch chile can be enjoyed beyond the harvest season. A summary of customer reviews reports that multiple buyers roast their peppers right away and stash them in the freezer, with the roasted chiles holding their flavor.[2]
Making chile rellenos and other stuffed peppers
Big Jim's large pods and thick, meaty walls make it a natural fit for stuffing — one chile source calls it "the definitive relleno chile," and NuMex Big Jim is considered the world's largest green chile pod. The seller suggests filling these medium-heat chiles with cheese or meat and baking them for rellenos, and describes the Charger variety's thick walls as ideal for stuffing as well.[1,2,3]
Grill and chop into soups, scrambles, and stews
The merchant suggests grilling these Hatch chiles and chopping them to add depth to soups, scrambles, and green chile stew. The Charger variety's thick walls are described as making it especially suited to grilling, along with stuffing and adding bold flavor to stews and sauces. Beyond the grill, the seller also lists roasting and blending among the ways the chiles can be used.[2]
Adding Hatch chile flavor to stews, sauces, and salsas
Use these medium Hatch green chiles to add flavor to stews and sauces, or blend them into salsas, enchilada sauces, and dips. The merchant describes the thick-walled Charger variety as ideal for bringing bold flavor to stews and sauces, and suggests the chiles are versatile across roasting, grilling, stuffing, and blending uses.[2]
Everyday Southwestern cooking with fresh green chile
These Big Jim and Charger Hatch peppers are marketed for classic Southwestern cooking: roast and peel them at home, stuff them, grill them, or blend them into sauces. The seller describes thick, meaty walls and medium heat with a noticeable kick that isn't overwhelming, for those who enjoy moderate spiciness. A review summary also points to everyday cooking that showcases fresh green chile flavor, with reviewers finding them great-flavored straight from the box.[2]
Fresh green chile straight from the box
Reviewers report these medium Hatch peppers are delicious and great-flavored right out of the box, so they can be enjoyed fresh as-is. That fits everyday cooking where you want fresh green chile flavor to be the focus.[2]

Love the Chiles!
We have purchased many products from Fresh Chile Company and love your products and your company! We received the chiles, roasted them, and they are wonderful! We only wish there were better communication about when we would receive the order. We understand you can't control the weather, but a broadcast email or web posting on why things are delayed would resolve a lot of questions

Outstanding
Outstanding. There is no green chile like Big Jim! Hooked!
Thick and meaty, ready to roast
I've bought a lot of Hatch chiles over the years, but my 25# box of Big Jims were the nicest thickest meatiest chiles I've ever had. There were a bunch of ripe red ones and others partially red, that were so meaty they peeled easily after roasting, which is unusual for red ones. Perfect for rellenos and all sorts of tasty meals. Thanks!
I was pretty disappointed with the heat level
I was pretty disappointed with the heat level. I was of the impression that the heat level was going to be substantial, given that they were marketed as "Medium heat". I've had poblanos that were hotter and since I was trying to make a sort of Cowboy Candy, had to add several grinds of habanero flakes to get to an acceptable heat level.
Love these chiles!!!!! Best in the

It was great, my first time with fresh peppers and your video was a big help. Will definitely order again and maybe go a little hotter. Great flavor!
The shipment took 4 days to arrive
The shipment took 4 days to arrive. It went from NM to Kentucky and then to Montana. Was supposed to arrive 2 days but in the end they were in good shape. Roasted the last box yesterday and only 1 chili was rotten.
They were great and have been roasted and put in freezer
They were great and have been roasted and put in freezer. The taste is fantastic!!! Thanks, Ron Stafford
I was a little disappointed
I was a little disappointed. There were at least seven or eight chilies that were not usable. One was slimy the others had rotten ends or rotten spots.
Was not happy with the way they showed up
Was not happy with the way they showed up. 50 % was wilted really bad. And had about 8 of them that was completely rotten
First timer ordering
First timer ordering, and the BigJim/Charger peppers were really good. Only complaint is that I received mine at the end of the UPS route on the hottest day in Kansas. His truck temp was 150 degrees. My peppers were pre steamed as a result, but I was still able to roast them. Very good taste.
These are an annual treat for me and my friends and family.
These are an annual treat for me and my friends and family. I get a box of Big Jim and Charger chile peppers and make chile rellenos. They are perfect for this.
I never received my
I never received my chiles
75% of my order was too shriveled to roast and peel😏
My box of Chile arrived with 50% of the pods turning red. That honestly did not bother me. However, 3/4 of the box was already shriveling. I was only able to roast and peel about 1/4 of the peppers due to the shriveling. I was so disappointed.
Approximately 6lbs were smashed/rotten or broken
Approximately 6lbs were smashed/rotten or broken. Counting those, I definitely did not receive the 25lbs. Closer to 20.
Had to toss half of the box
Had to toss half of the box, a lot had already turned red! Also they had molded the bottom half.
Outstanding freshness
Outstanding freshness. A few at the bottom started to mold, but that was my fault for not taking them out of the box right away. Will buy again next year.
These were absolutely delicious
These were absolutely delicious. They did sit on the ups truck for an entire day while it was near 100 degrees so I was a little concerned but they seemed ok do I just roasted them immediately. Absolutely delicious and highly recommended. Not sue his to address that ups issue though
They arrived in great shape and smelled like I
They arrived in great shape and smelled like I had just picked them!!!
I roasted my chilis the day after I recieved them
I roasted my chilis the day after I recieved them. They were very large, fresh, and gave off a wonderful aroma as they roasted in my oven, and on the grill outside. I had enough that we will have 3 dinners of chili rellenos, and I froze the rest for salsa, except the few I froze fresh for soups, etc. I will be reordering next year. Thank you!
Perfect!!

I have been having my family who all live through out New Mexico send me both Green and Red Chili since my work relocated me. I tried your company and some of the green Chili were already turning orange, some had mold and about half were older already wrinkled I roasted them anyway making the best of it
The chilis were in great shape
The chilis were in great shape. Relatively flat and easy to roast and peel and freeze. Next time I need to order the next level of heat.

as advertised: big fat peppers! arrived on schedule and in perfect condition.
Half were red, bottom half had to be thrown away because of mold! It wouldn’t let me attach a photo!
Excellent!

Product was not fresh. Wrinkled and some where rotten
It's like living back in Santa Fe. So good.
I ordered a 25lb box of medium. Heat, I got beautiful, big peppers, but there was no heat. They were very mild. had excellent flavor but again no heat, not even the little spice, kind of disappointed.
Not happy with delivery updates on this app-
Arrived wilted and not appealing due to 4 day transit and poor packaging.

We ordered 2 more rounds of fresh Hatch chiles after we received and used our first batch in a week. This was our first time and my husband says this is the "best idea we've ever had" - I think he's right. We gambled on this and WON! We will always order fresh Hatch chiles!

The most flavorful chilis are grown in Hatch
I had my little chili roaster ready as soon as they arrived. Gorgeous emerald color when the skins slipped off, made my mouth water with their fragrance, great flavor as always. The simple joy of tradition from the greatest farmers on Earth. Thanks for my chilis, beans, and onions!
Delicioso.
I am thrilled with my order of fresh green Chile. I had to leave beloved New Mexico, and was a bit desolate thinking about the lack of fresh green Chile until I found you guys. The chiles were packed beautifully, very firm and fresh when they arrived. My house smelled just like New Mexico when I roasted them under the broiler and I was in heaven again.Nothing beats You guys,! I will definitely buy my Suply from Fresh Chile again.
Same as last year
Same as last year. There awesome
Fresh chilies
I ordered ten lbs of the medium heat fresh chilies to be shipped to a cousin of mine in Iowa who doesn’t know how great hatch roasted chilies are. There was only one that didn’t make the trip according to his report. They roasted and enjoyed making green chili and salsa. I was really worried about shipping that far but they made it. Thanks Fresh Chile Co!!
The chilis were great as normal
The chilis were great as normal. The condition upon receipt was very good, there were not peppers spoiled or damaged. The only observation is that these peppers were not as hot as the same variety purchased last year.
This Was Not What I Am Used To Receiving You From You!
These were the worst fresh peppers that I have received from you. They arrived limp, soft and, the roasted pepper flavor reflected that.
Awesome always fresh
Awesome always fresh.
Lived in eastern Az
Lived in eastern Az. For 40+ years and always looked forward to chile season. We made a day out of going to Hatch to get some green chiles and burgers from Sparkys. We made a move to Mississippi and was considering making the drive. I ended up pre-ordering chiles instead and was excited about how quickly they were delivered. I then roasted 50lbs and was a very happy guy. Thanks for what you all do!
Not fresh
Not fresh. Didn’t feel safe to cook. Had to throw out.
Arrived fine
Arrived fine, kitchen smelled great when I roasted them! Froze them individually, then bagged them, so I can take any amount out to thaw when needed. Already used one for breakfast. Perfect taste.
Showed up perfect. All peppers were of good quality
Green Chili Time
It’s that time of year where that unmistakable smell of roasting chili fills the air. I Love my Big Jim chili’s. There is nothing like New Mexico hatch chili. The medium has just the right amount of heat. Quality and quantity of the chili were good and shipping was fast.
Arrived as promised in great shape
Arrived as promised in great shape. Roasted them…my back yard smelled like a late autumn day in Ruidoso! Quality product that will brighten up meals for many months. Thank you.
They were wonderful and peeled so easily when they were roasted
They were wonderful and peeled so easily when they were roasted. I will buy again soon as I shared too many with friends:)
I bought these expecting them to be fresh...NOT!
I bought these expecting them to be fresh . They were anything but fresh. I received the box on a Tuesday and decided to roast them on Saturday. We'll, Saturday rolls around and Iopened the box they were in. OMG! There were rotten chilis, molded, and all but about 8 chilis were soft and beginning to wrinkle from age. SERIOUSLY DISAPPOINTED WITH THIS!!! The bottom of the box had mold all throughout. I wasn't going to take the chance of getting sick from them. I ended up throwing 95% of them in the trash. Needless to say I won't ever purchase this from these guys again! I'm also going to cancel my monthly order I have with them. Sending me product like this, they don't deserve my money...
Fresh

Versatile topping for many foods
I moved to Colorado from Chicago and I put them on everything now. They love their green chili out here. Put it on burgers, pizza, salad, pasta, eggs anything. I like it super spicy on burritos personally. I’m Chicago we have this condiment called Giardanera we put on everything. Similar concept.

Hatch chile identity and Big Jim variety
Hatch chile is the most common way of talking about New Mexico chile. Our chile varieties range from about 500 scoville to 12,000 or so, depending on the variety. The Hatch valley is the number one chile growing region in New Mexico, and has a yearly festival on Labor Day(around the start of September) weekend since 1972. The official name for these chile varieties is New Mexico chile, and most of the varieties developed by New Mexico State University like Big Jim and Sandia bear the designator Numex.

Roasting and peeling are essential
Quick edit: Make sure you’re not eating them raw, by the way. Typically you roast them until the skin blisters, peel the skin off (with gloves and glasses because the capsaicin in the pepper is a irritant and will hurt), and then use the ‘meat’ that remains.

Big Jim Legacy: excellent flavor and moderate heat
The peppers roast nicely and are super easy to peel. The flavor is exquisite and the heat level is just right — it’s certainly quite noticeable, but still edible. I’m gonna grow a lot more of these next year!
