Product Insights
Fresh NuMex Sweet onions from Hatch, New Mexico arrive as a 10lb box of certified, NMSU-bred sweet onions—low-sulfur Hatch Valley soil keeps them under the 5.0 pyruvic-acid sweet threshold, so they eat as mild as Vidalia or Maui raw and get sweeter when cooked, holding a crisp-tender texture for frying, grilling, or quick-pickling. The New Mexico True certification and trademarked NuMex Sweet designation verify the Hatch Valley origin; the harvest runs May–August and the box ships fresh from that crop, typically 12–20 medium bulbs. Tradeoffs: conventionally grown without organic certification, occasional hotter bulbs despite the lab screen (an ice bath tames the bite), shipping can be delayed or lost and boxes arrive beat-up, and because it's a fresh seasonal crop it's best used within a few weeks—though pickling stretches it to about four weeks. At $15 (or $1.20/lb during sale) it undercuts comparable Hatch sweet onion packs.
Verified claims

- Pungency
- Lab-screened below 5.0 pyruvic-acid units; mostly mild, occasional hotter bulb

- Certification

- Raw flavor
- Buyers rate raw slices as sweet and mild as Vidalia or Maui.
- Raw use
- Mild raw bite suits burgers and sandwiches; an ice bath cuts the edge.
- Variety

- Cooked uses
- Bulbs keep their shape and crisp-tender texture when fried, grilled, or pickled.
- Texture
- Buyers confirm hand-harvested, high-water bulbs fry into intact, crispy rings

- Harvest timing
- This box ships from the live Hatch crop, harvested roughly late May through August.
- Use-up options
- Quick-pickling stretches the box to about 4 weeks refrigerated.
- Arrival condition
- Hand-harvested to prevent bruising, though boxes can arrive beat-up; with proper storage, buyers report 2+ weeks of freshness.
- Shipping
- At the $12 sale price, the 10 lb box is $1.20/lb; freight is costly and some buyers report boxes never arriving.
- Delivery reliability
- Buyers report some boxes arrive missing or delayed; most arrive fresh and intact.
- Seasonal availability
- In stock now; the box ships only while Hatch harvest runs, roughly late May through August.
- Box contents
- Packed by weight, a 10 lb box typically holds 12–20 medium onions, 2–3¼ in diameter, with an occasional smaller bulb.
- Value
- At the $12 sale price the box costs $1.20 per pound, undercutting comparable Hatch sweet-onion packs.
- Growing practices
- These sweet onions are conventionally grown — no organic certification, no published pesticide program.
- Raw bite
- 30-minute ice bath tames the raw bite of occasional hotter bulbs, keeping crispness
- Cooked use
- Cooking sweetens them further, and they stay crisp-tender when pickled or fried into rings

Slice raw for toppings and sides
Slice the onions raw onto burgers, sandwiches, and salads, or cut up a few slices over eggs with a little fresh chili hot honey. A few raw slices also work alongside a meal.[2,5]
Grill, caramelize, or sauté
Grill, caramelize, or sauté the onions for cooked dishes; try sautéing slices in butter with seasonings as a vegetable side or piling cooked slices on a burger.[2,5]
Make onion rings
Slice the onions into rings, dip them in egg-milk mixture and dredge in flour coating, then fry until golden. Serve with a fish fry or alongside a Hatch Green Chile Onion Burger.[1,2]
Add to salsas, soups, and more
Add the onions to salsas, soups, enchiladas, and appetizers.[2]
Use them for pickling
Use the sweet onions for pickling, such as in pickled Hatch chiles and sweet onions.[3,4]

Hatch Sweet Onions
These Onions rated up there with Maui and Vidalia onions. What's great about these onions is that they are slightly sweet onions raw, but when you sauté them or fry them, they get sweeter. Love them!!!
Love
Love them
Highly recommend this company . Just don’t buy the onions.
The onions were hot not sweet. 5 onions for too much money. Very dissatisfied . Your products are so good but you need to drop this item as it is an embarrassment and will leave a buyer with a cautious feel about your products. I will still buy your products but not the onions.

These onions are amazing
These onions are amazing, I even like them sautéed in butter with some seasonings as a vegetable❣️My second year buying them
Wow
This was the first time I'd had NuMex Sweet Onions. Unbelievably good. I grew up in South Carolina and remember when Vidalia Onions became a thing. In my opinion, the NuMex Sweet is better than the Vidalia. The texture is better. The flavor is better. We've used them raw; made onion rings; used them in every way imaginable and they were really good every time. Very glad we made this purchase!
Numex onions

They were good.
The BEST ONIONS in the world.
When I first got them I thought just like Texas 1015 onions. Boy was I wrong. These have better flavor and slice nice. I gave some to my friends and they said they never had anything like this. Thank you for growing a very nice onion. I will reorder after I finish with what I have. THANK YOU VERY MUCH.
Sweet onions
They are some of the best onions I've ever bought.
The best Onions! Always arrive fresh and quickly.
We were disappointed that the onions, although very fresh, were not any different that onions we purchase from the grocery store. We were expecting them be the the really sweet mild onions that we used to have when we visited Las Cruces years ago.
NuMex sweet onions are terrific. Bought 10 pounds just try them out and they are slightly more heat than Vidalia but much more flavorful. We love them but freight is a prohibitive from New Mexico to North Carolina!
They are good.. I bought to many. Trying to use lots of onions in our meals .
