Product Insights

The Fresh Chile Company's Posole is a nixtamalized dried hominy that delivers the chewy, al dente texture and toasted-corn flavor of authentic New Mexican holiday posole, unlike soft canned hominy, while being low in sodium and nutritionally enhanced by the lime cook that releases niacin, adds calcium, and cuts aflatoxins by up to 94%. It cooks in 30–35 minutes in an Instant Pot or 2.5–4 hours on the stove, with an optional baking-soda shortcut, and each 16oz bag yields about 7 cups (6–7 servings), so holiday crowds need two bags; the tradeoff is that it's dried hominy only—no seasoning—and shipping can cost as much as the $8.95 bag price, but buyers confirm it restores the traditional Christmas Eve and New Year's Day posole they grew up with, pairing with red or green chile.

Verified claims

Texture
Dried kernels cook up firm, chewy, and al dente; canned hominy turns soft and mushy.
Nutrition
Low in sodium, and the lime cook releases niacin, adds calcium, and reduces storage toxins.
Prep
Ready-to-soak nixtamalized kernels — simmer 2.5–4 hours to bloom, or 30–35 minutes in an Instant Pot.
Versatility
Tied to Christmas/New Year posole and extends to menudo, salads, and crispy skillet sides.
Regional identity
Posole, spelled without a z, names the New Mexican chile-stew tradition and its grain.
Holiday ritual
Buyers report it delivers the traditional Christmas Eve and New Year's Day posole.
Cooking
These kernels are already nixtamalized, pressure-cook in 30–35 minutes, and stay chewy rather than gummy.
Chile pairing
Red chile adds warmth and a deep color; green chile gives a lighter, brighter spice.
Heat
Buyers' very hot reviews describe the finished red chile stew, not the plain kernels in the bag.
Safety
Lime cook cuts aflatoxins by up to 94%.
Yield
A 16 oz bag yields about 7 cups cooked, roughly 6–7 posole servings.
Pressure cooker
Dried hominy cooks in 30–60 minutes at high pressure, with no soak and a 20-minute natural release.
Baking soda shortcut
A teaspoon of baking soda in simmering water cooks dried hominy in 90–120 minutes, no soak.
Flavor
Dried kernels rehydrate to a chewy, toasted corn that soaks up chile broth and aromatics; canned hominy doesn't.
Aroma
Traditional lime processing gives this hominy a roasty nixtamal aroma buyers notice while cooking.
Uses
Beyond posole: braises, casseroles, skillet sides, salads, and stews.
Batch scale
One 16 oz bag makes about 6-7 servings, so a holiday crowd needs two or more bags.
Material
Dried hominy, already nixtamalized with lime — the bag contains no chile seasoning or sauce.
Family recipe authenticity
Ex-New Mexico buyers say this bag restores the Christmas Eve posole they grew up with.
Cost per serving
About $1.30–$1.50 per serving at the $8.95 sale price.
Batch planning
Two 16 oz bags make the 12-serving posole batch.
Dried vs canned
Dried hominy has near-zero sodium and holds shape vs canned, but needs an overnight soak (or 30–35 pressure-cooker minutes).
Shipping cost
Shipping can run as high as the $8.95 bag price.
Bundling
Bag is dried hominy only — seasoning, sauce and salsas are add-ons.
Order quantity
One 16 oz bag yields 6–7 servings; two bags make 12.
Soak forgiveness
Buyers report a short-soak Instant Pot cook works, so the overnight soak is optional.
Cook method
Best texture needs salt after bloom, a low simmer, and natural pressure release.
Use case
A 16oz bag yields about 7 cups cooked and is pantry-stable for years.
Regional tradition
Posole is a Southwest holiday stew of hominy, pork, and red or green chile; the same kernels also go into Southern casseroles and grits.
Nixtamalization
Already nixtamalized in lime, so it cooks like dried beans and delivers more absorbable niacin and calcium.

Uses

Make posole or pozole

Use this dried hominy to make traditional New Mexican posole with red chile, beef or pork stew meat, onion, garlic, cumin, and oregano. For a from-scratch variation, cook the posole with red Chimayo chili sauce and pork belly, or use a family recipe with dried red chiles. Use it in place of canned hominy, and try red, white, or green pozole. Simmer on the stovetop or pressure-cook in an Instant Pot. Serve the stew for Christmas Eve, New Year’s, Mother’s Day, or a cold-night meal.[6,7]

Top it with garnishes, salsas, and sides

Top posole with cabbage, radishes, and chopped onions. Add sour cream and cheese if you like, and serve salsas on the side. For a holiday table, pair posole with tamales and biscochitos.[1,6]

Add to green chili stew, soups, and salads

Cook this posole into green chili stew, or add cooked hominy to soups and hearty stews like menudo. It also works chilled and rinsed in salads, or tossed with beans and bitter greens.[2,6,7]

Bake into a creamy casserole or au gratin

Bake cooked hominy in a creamy sauce with spices, green chile, and kielbasa. Mix it with sour cream and cheddar cheese for a hominy casserole, or make an au gratin with sour cream and bacon.[3,4,8]

Make skillet or Veracruz-style hominy

Cook hominy in a skillet with jalapeño, bacon, and chicken broth for a side dish, or make Veracruz-style hominy with tomatoes, green chilies, green olives, capers, and parsley.[4,5]

Make hominy grits

Grind dried posole in a coffee grinder and cook it as grits, or puree leftover cooked hominy for hominy grits.[7,9]

My granddaughter made it for Mothers Day and it was delicious!! Then a friend of hers was sick so she took her some and she also loved it. Her friend is from the south and wants to learn how to make it. Also they all loved the salsa too.

Jess

A delightful piece of home. Packaged extremely well.

The posole was so delicious!

Nancy Kuhlman

The posole was so delicious! It was chewy but not gummy, and we loved smelling it as it was cooking. I use my grandmother's recipe as she used to live in New Mexico, using dried red Chiles off my ristra.

Posole was very hot! I'd recommend making 1/2 batch first.

Christmas (or anytime) Posole

David Maywood

Fresh or frozen, there is always Posole in my house. I don’t seem to be able to make it the same every time as I usually cook/make with what’s on hand, but always give great reviews when sharing. Of course when we all get together for Christmas on Anna Marie Island (FL) there will be a fresh pot on the countertop.

dried hominy

Connie Hayes

I am so happy we found you!! I can't find the dried hominy anywhere, but it is the perfect flavor for our dishes!! I love that it is shelf stable, and we can use it in so many ways.

Check out the Pozole recipe in Fresh Chile cookbook!

I tried the Pozole recipe and it was delicious! My family loved it! I had to order some more.

David

Great texture and flavor.

I'll never use canned hominy again!

JAMES GOULDING

There is no comparison between this and any canned hominy. If you are making posole, you will want this freeze-dried hominy!

Jody

Always great, shipping to me is as much as the order.

delicious and tender

Laurie Hight

I made it for the first time and we all loved it. I forgot to soak it. In the morning I rinsed and set them to soak for an hour then used my instant pot on high pressure for 1 minute, let release naturally for an hour and the posole was done. I removed the posole and added 3 pounds of pork butt and added the posole seasoning about a quarter of the amount recommended, then added the red sauce. Cooked it on high pressure for and an hour, let it release naturally for 30 minutes. Wow, delicious.
