Product Insights
This raw mesquite and wildflower honey from The Fresh Chile Company pairs the light profile of mesquite with wildflower accents for a robust blend that varies batch to batch with the Southern New Mexico bloom, reflecting a 110-year Mesilla Valley family lineage (a region keeping bees since the 16th century) and endorsed by cowboy cook Kent Rollins. It is 100% raw, coarsely strained to retain natural pollen, never pasteurized or fine-filtered, and mesquite crystallizes faster than most varietals—but a gentle 95–110°F bath restores it. Sealed honey keeps indefinitely at room temperature, and the 16-oz jar is filled by net weight, so headspace is normal. Buyers use it straight from the spoon, in baking (swap ¾ cup honey per cup of sugar, cut other liquid by ¼ cup), for grilled meats, roasted vegetables, cocktails, and pairings with chiles, dark chocolate, and whiskey. At about $0.62/oz, it is entry-level for mesquite—roughly half the price of raw Arizona honey—but the tradeoffs are occasional transit leaks (buyers advise plastic-bag packing) and inherent batch variation in flavor, aroma, and color.

Delicious
The raw natural honey was amazing. I’ve already submitted another order.
Exquisite! Very fast shipping and well packed.
Delicious!!
I ordered this for the first time 2 weeks ago. It is delicious! I have had it on Sopapillas. I make a drink with lemon, lime, sea salt, spring water, and honey.
Raw Mesquite Honey packaging
First, it leaked. It should be packed in a plastic bag should there be a catastrophic leak. I always do that when I ship honey and I ship plenty. Second, it was not filled to the fill line. Don't care what anybody says, the fill line is the top of the bottom ring. So, I was disappointed. I've not opened it to check the water content. It tastes very nice. I wonder why this page is not in English.
Off the chart honey.
Great flavor. You have to try it.
Such a robust taste. So good I just put some on a spoon and eat it alone

Honey from New Mexico!!
I tried the Raw, Mesquite & Wildflower Honey and I really enjoy the flavor. I usually add it to my coffee for sweetener, or add it to butter on toast. I order with my green chili and it all gets delivered to my house in Texas!! Love the Honey!!
