Product Insights
Currently out of stock, this 5-lb bundle of Frozen Hatch Green Chile (mild) is rated 4.69 stars from 49 reviews, and it delivers the authentic Hatch Valley experience: 100% certified Hatch chiles from a fifth-generation farm, flame-roasted and flash-frozen at the source for smoky-sweet depth and a firm, meaty thaw (no calcium chloride or pickled canned-taste), in five 1-lb vacuum-sealed bags that keep 12+ months at 0°F while retaining 90–95% vitamin C. Grown in the 40-mile Rio Grande stretch defined by a 2012 New Mexico law and shaped by Hatch Valley’s elevation, sulfate water, and pyrazine-rich soil, the mild 1904 variety runs 0–2,000 SHU—bell-pepper heat with a warm roast; choose whole pods (peeled, not deseeded) for stuffing or chopped (de-stemmed, partially deseeded) for salsas, and add straight from freezer to soups, stews, or sauces, bridging the 10 months outside fresh season. At the $72 sale price (list $75) it undercuts Hatch Chile Store’s same format by $13 ($14.40/lb), but caveats exist: some buyers get hot instead of mild or thawed boxes (free reship if photographed within 4 hours), a few report soft batches, and gloves are wise when handling hot pods.
Verified claims
- Terroir chemistry
- Hatch Valley's elevation, sulfate water, and pyrazine-rich soil deepen the mild 1904's roasted flavor.
- Origin
- A 2012 New Mexico law ties the Hatch label to chile grown in a 40-mile Rio Grande stretch.
- Processing
- Flame-roasting at the source builds smoky-sweet depth; flash-freezing after one cook keeps thawed chile firm and meaty.
- Heat
- The mild 1904 Hatch chile runs 0–2,000 SHU, essentially bell-pepper heat; buyers still report a warm roast.
- Provenance
- Grown on a fifth-generation Hatch Valley farm and certified 100% Hatch, with nothing imported.
- Flavor
- This bag's 1904 chiles are already flame-roasted into a smoky-sweet depth.
- Convenience
- Already roasted and peeled; add straight from the freezer to stews, soups, and sauces.
- Recipe ratios
- Stew 2 cups; queso 3/4 cup; eggs/burgers 3 tbsp — per-batch chopped doses.
- Yield
- 5 lb bundle is about 10 cups chopped, in 1-lb vacuum-sealed bags, 2–3 weeks of cooking.
- Order accuracy
- Some buyers report receiving hot instead of mild, and others got thawed boxes
- Texture
- Flash-frozen roast thaws firmer and meatier than jarred; a few buyers report soft batches.
- Freezer storage
- Keeps optimal quality 12+ months at 0°F; 1-lb bags thaw only what you need.
- Variant differences
- 5 lb bundle in 1-lb bags, whole or chopped: whole keeps shape for stuffing, chopped is de-stemmed for salsas.
- Arrival guarantee
- A thawed box is reshipped free if photographed within 4 hours of delivery.
- Portion control
- 5 lbs ship as five 1-lb vacuum-sealed bags, so you thaw only what you need.
- Price vs rival
- 5-lb dry-ice bundle is $72 — $13 less than Hatch Chile Store's same format.
- Per-pound price
- At the $72 sale price, this 5-lb box is $14.40/lb, $13 below the rival's same 5x1-lb format.
- Portioning
- Five vacuum-sealed 1-lb pouches thaw one at a time and keep 12+ months at 0°F.
- Prep saved
- Flame-roasted, peeled, and frozen at the farm — skips the bushel-peeling step and goes straight from freezer to pot.
- Deseeding
- Whole pods are peeled but not deseeded — seeds remain; chopped packs are de-stemmed and partially deseeded.
- Freezer quality
- Flash-frozen right after roasting, it keeps firm texture and authentic roast flavor for 12+ months at 0°F.
- Arrival condition
- Ships with dry ice, but some buyers receive thawed parcels — check on arrival and use the no-charge reship offer.
- Freezer shelf life
- Keeps optimal quality 12+ months at 0°F, retaining 90–95% of vitamin C.
- Freezer use
- Buyers report the 1-lb pouches thaw firm and go straight into soups, stews, or sauces.
- Cooking use
- Frozen pre-roasted Hatch bridges the 10 months outside fresh season for sauces and rellenos.
- Chile size
- Whole pods run 4–5 inches, some 7–8; thick 1904 walls mean fewer pods per pound.
- Whole vs chopped
- Both variants offered: whole (peeled, seed-in, meaty after thaw) or chopped (de-stemmed, partially deseeded).
- Nostalgia
- Buyers far from Hatch report using it to recreate green chile and holiday stews year-round.
- Handling safety
- Use gloves and handle with care — capsaicin from hot pods can burn hands for days.
- Frozen vs canned
- Frozen roasted Hatch avoids the calcium chloride and pickled note of canned chile.

Ready-to-cook chile for green chili stew
Customers use this flame-roasted, peeled frozen chile for green chili stew and Colorado green chili, where they say it delivers the authentic Hatch flavor those recipes expect. It arrives ready to cook, skipping the bushel-peeling step — one annual chili-maker called that the best part, and repeat buyers cite it as their main time-saver. Transplanted Southwesterners also use it to recreate green chili far from Hatch; reviews note the mild still carries a slight heat, and buyers wanting medium found it tasty but missing that kick.[1]
Making Salsa and Salsa Verde
Shoppers use this mild Hatch green chile for making salsa and salsa verde. Customers report that the 1-lb portions thaw quickly and the chiles blend into salsa without extra chopping.[1]
Roasted Hatch chile for quick egg breakfasts
One customer, per a review analysis, uses this mild green chile for a quick breakfast with eggs. A single chile, taken straight from a thawed bag, added roasted heat to their two-egg and bacon plate.[1]
Thaw only what you need
Keep peeled Hatch green chile on hand in the freezer and thaw just the amount a recipe calls for. It comes in 1-lb vacuum-sealed bags within a 5-lb bundle, so the rest stays frozen until you need it. Customer feedback notes the flat bags store upright in the freezer and thaw one portion at a time.[1]
Product comparison
Compared within this brand.
| Frozen Hatch Green Chile (mild): Choose this for gentle heat: the brand calls its mild 1904 variety a subtle warmth that doesn't overpower, at 500 Scoville Heat Units, and suggests mild as a starting point for newcomers. The flame-roasted chiles come peeled (but not deseeded) in 1-lb vacuum-sealed bags within a 5-lb bundle, so you can thaw just what you need, and review analysis notes skipping the peeling step is repeat buyers' main time-saver. That analysis also notes mild still carries a slight noticeable heat, and buyers who wanted medium may not get the kick they wanted.[1] | Frozen Hatch Green Chile (medium): Choose this if you want moderate spiciness: the merchant lists medium at 2500 Scoville Heat Units and describes it as a balanced heat with a noticeable kick that isn't overwhelming. It's flame-roasted, peeled, and packed frozen in 1 lb. vacuum-sealed bags (resealable, per reviewers) sold in a 5 lb. bundle, with Chopped or Whole options, so you can thaw smaller amounts as needed. Note reviewers report the medium often reads mild and varies by batch, and the chile is not deseeded, so seeds remain.[2] | Frozen Hatch Green Chile (hot): Choose this for the merchant's Hot heat level — rated 5000 Scoville Heat Units and described as a robust, lively heat for those who love fiery flavor. The freshly picked Hatch peppers (Sandia Select, Arizona 88, or G76 varieties) come flame-roasted and peeled but not deseeded, in 1 lb vacuum-sealed bags sold as a 5 lb bundle so you can thaw only what you need, and reviewers report the pre-roasted chile saves time over roasting, peeling, and chopping fresh. If consistent heat matters, note that reviewers say 'hot' orders sometimes arrive mild — especially chopped — and the review analysis advises choosing Whole in that case.[3] |

Great Chilies!!
We just make our favorite green chili recipe - Jerry Simmons's 2006 World Champion Winner as every year in the last 30 years living in Denver. Our first year in Savannah and used 5 pounds of your frozen mild and it was a true winner! The best part by far was not having to peel a bushel before prepping! We’ll be buying at least twice a year.
FROZEN HATCH . Anaheim chili doesn't give the chili verde that extra savory taste. Thank you!
Loved how my order was delivered very soon. Did I win the $10,000 ? I have a widowed daughter with 3 children, I'm helping raise <3.
Frozen chiles
Too soft, very difficult to get the seeds out. Wouldn't buy them again! Might as well go back to canned Ortega chiles, but they are horrible always split! Guess I will have to buy fresh and do it myself!
It is so good!!
Im so in love with this stuff
It was delicious. I thought I was just getting just chilies
I’m glad I opened it or it would have rotted in the box. It was not labeled as place in freezer upon delivery. Perishable isn’t very descriptive!
Great for making my Colorado Green chili on batches.
Hatch Chile Is the best!
We use it all the time, it is the best!! We are from Las Cruces, happy to receive Hatch Chile….
Hatch enjoyed in the PNW
Miss having Hatch Chile in the Northwest! I do grow some, however it does take a while to grow. Good to have some now!
Yummy as usual
I really wanted medium instead of mild, but I awaited too late & they were all gone. These are very tasty & I have no complaints.
Chunked not chopped
I ordered mild, chopped green Chiles. The Chiles were not chopped as finely as I would have preferred. Flavor great as always!
Arrived frozen!
Review
Exactly what I wanted! They’re excellent. The flat frozen package is great too…fits in the freezer well, lined up like files in a cabinet. So much better than a round tub.

We are from NM and order several times a year from different farms - we now have found our farm . The Green and Red in a jar and multi heat frozen diced green are absolutely delicious and great , we share with all our friends . We will be back to order more .

Excellent and packed well(slim uniform packaging neatly stores in freezer). only issue is i got chopped instead of whole. I've ordered about 6-8 times this year, Fresh, jarred, frozen, nuts, etc and this was only issue I have had. Not a big deal. I have Chili for the winter!!!!!

The Chiles came rock hard frozen and can't wait to use them for Christmas.

I took a pack out to thaw as soon as they arrived. They are packaged very neatly so they store compactly in the freezer. I ordered the peppers whole. Every one of them are whole and still firm enough to stuff for recipes. We had them for breakfast this morning and they are excellent. I will be stuffing the remainder of the first pack with chicken for tonight's diner. Great!
5 Stars
The Chili's arrived in great shape. Made a Green Chili Stew with them and tasted great. Would recommend there product.

Pro tip for buying and freezing Hatch chiles
The pro move is to buy a ton of them, roast them and remove the skins, chop them and then freeze in smaller batches so that you can use them all throughout the year.

Frozen green chile preferred, vacuum sealing recommended
I've always used frozen, if it's not available to be fresh. If done at home, I'd highly suggest vacuum sealing bags with smaller portions. It defrosts in warm water quickly.
