The medium hot Fresh Red Hatch Chiles were perfect! They arrived in great shape (didn’t have to throw any away). I roasted them over flames on my gas stove, peeled and deseeded them, and in the fezzes they went. Made my first batch of Chile Saice for enchiladas…yum! With a little bit of help from my food processor and the food strainer attachment to my stand mixer, they yielded a pot of bright red puree ready to cook with my favorite “secret” ingredients into purely magical sauce. The flavor of these peppers was great. I was a little disappointed in the size and thickness being that they are Big Jims and the Greens are almost twice the size of most of these reds. That might be characteristic of Red peppers and this is my first time buying red. I cooked them on my Big Green Egg with Mesquite so the flavor is off the chart and really decent heat.

I ordered a small box of the fresh red medium hot chile and they were PERFECT! Just the right heat and a nice, big size perfect for rellenos! We made rellenos and red chile cheese burgers that night after I roasted them on the grill. Perfection!

This is the third year I have ordered the fresh red chile and this year the quality was not as good as the past two years. There were a lot of chiles that were too soft and mushy to want to roast them. There were also quite a few broken ones that were moldy. Seems like they should have been harvested a little earlier. With that being said the chiles I did roast have a very good flavor. I will have to think hard about ordering them again next year.

Even though I grabbed the box of reds the moment they arrived there were already a number of red chilies that were starting to mildew and rot. You were so kind to send a 2nd box but I think the reds aren't going to do well traveling more than a day or two. The ones I used from the first box of reds were so delicious! I made chili rellenos that were sweet and medium hot. Yum! I made green chili enchilada sauce and rellenos from the fresh greens and many that are left are turning red now. I think the fully red don't travel well and need to be put on ice or roasted and shipped frozen. I'll just ordered the fresh greens in future and wait for some to turn red. My chickens appreciated the inclusion of a giant N.M. grasshopper in the last box. I think you should get some chickens to patrol your fields and reduce the hopper population naturally! My chickens would like to volunteer! I haven't opened your bottled sauces yet but will as soon as my fresh chilies run out.

Well where do I start? Ok so I ran into the owner back a few months ago at a restaurant here in Albuquerque I asked him about the fresh red chili 🌶 he advised me to place my order early so I would get the chili I wanted.. so I did I ordered well over a month ago so I thought There would be no problem with my order! Boy was I disappointed with an email I received today! They said that they couldn’t fill my order but offered me big Jim chili.. a mild.. my original order was for hot! Here’s what’s going on.. I didn’t get my fresh red from my usual place I get my chili fix! Because they assured me that they would deliver! So I paid $128.. for less than a full sack.. that’s a crazy price but if the chili’s good I don’t mind paying! After I read the email and knew this company couldn’t deliver I quickly called my go to guy here in los Lunas he told me the red is passed the stage to roast.. so I’m s.o.l.. so I agreed to take the big Jim figuring something is better than nothing.. they revised my invoice and after they could come through with my original order I have to settle for something I really don’t care for! And get this now I’m paying more for something that is not up to par! Could someone please explain to me what’s up with that!! Totally unbelievable!

Firstly, let me just say I love TFCC and frequently order fresh Hatch chili sauces and seasonings. Unfortunately my recent order of fresh Hatch chilies didn't go so well. I didn't choose the most expensive shipping option (which was more than the price of the chilies) and paid the price. The chilies arrived not so fresh and had to throw them all out due to the bugs they had attracted. I'm positive if I would have chosen the most expensive shipping option, they would have arrived much fresher.

    Hey I am from Hatch, New Mexico! Currently living in Austin for the past 7 years though. There is a HUGE disparity from the HEB, Central Market "Hatch Green Chile" items you find at the store vs the actual food you find in Hatch and across New Mexico. The new mexican food puts the "Hatch Chile" items to shame. As the article said, in Hatch we differentiate the chile by names, such as Sandia and Big Jim. The names will tell you how hot the chile peppers are, and good lord the peppers we get here in Texas are no where close to as hot as the peppers that are actually from Hatch. Which is disappointing as someone from that region is looking for that level of heat and flavor. What makes Hatch green chile better than any other type of green chile such as Anaheims? It is the climate and soil in Hatch, IT IS PERFECT FOR PEPPPERS. The dry climate allows the peppers to grow angry with heat and full of flavor. As a local Hatch native, you can absolutely tell the differences in peppers, so in my humble opinion actual Hatch Chile peppers do have major differences between Anaheims. Also pro note to OP, "CHILI" is a type of stew or soup, "CHILE" is referring to the actual pepper.

  • Freezing Hatch chiles without separating red and green

    As someone who tries to buy 50lb annually I know quite well you can freeze them. I suggest taking off the caps and removing seeds (if you prefer to; I don’t) and then vacuum sealing and freezing. That leaves you with the most options later. Don’t bother to separate the red and green. These aren’t the reds that go into a classic New Mexico red sauce, they’re just ripened Big Jims.

    Correct, they have to be grown in Hatch to be considered Hatch chilis. I grow Anaheims which are part of the same pepper family but the soil and condition in Hatch are what gives them the official name.

    The thing about Hatch chile is that it’s really the only variety of New Mexico chile grown for mass consumption by consumers outside the state. This means that some chile grown around Hatch has the same issues with any other big-market crop bred to ship: durability prioritized over flavor, over-homogenization, chiles picked too soon, etc. And while there is definitely plenty of spicy and flavorful chile grown in Hatch, I can basically guarantee that it’s not what’s getting shipped to grocery stores in the Midwest… If you want the real New Mexico chile experience advice is the same as other posters on this thread: buy prepared product from companies that know what they’re doing and are picking chile for flavor and heat as much as anything else. 505 and Young Guns are good bets. Even frozen chile products from Bueno would be a good place to start if they’ll ship to you. Oh yeah, and by all means flame-roast ‘em if you’re not already. Nobody in NM eats raw green chile…
