Product Insights
Fresh Hatch Green Chile – Sandia Select (hot) is a certified Hatch Valley chile from Adams Produce, a fourth-generation family farm on 3,000 drip-irrigated acres, carrying the Hatch Chile Association's protected designation. It's the NMSU-bred heirloom successor to the 1956 Sandia, descended from New Mexico No. 9, and bred for up to 40% higher yield. The Hatch terroir delivers 23% more pyrazine flavor compounds than the same cultivar grown elsewhere, and the hot tier averages about 9,500 SHU—roughly 1.5 times Big Jim and beyond most jalapeños. The thick-walled pods hold a 4-ounce relleno stuffing, survive de-seeding, and are shielded from sunscald; flame-roasting at 500–550°F for 2–4 minutes yields skins that peel in clean sheets, with the calyx coming off by hand. Unroasted pods keep 5–7 days refrigerated, freeze well, and peel easier after thawing, while a typical stew uses 1 cup roasted chiles per 2 pounds of pork. The grower holds GLOBALG.A.P. food-safety certification, but the chiles are conventionally grown without organic certification, and availability runs from early July through late October.

Great roasted
These roasted great. The heat level is good. Just what I was wanting.
Customer service and shipping are terrible
We never received and when we called was told that UPS probably lost the order or the label fell off. FCC never took responsibility that they never sent the package to UPS. the email we received stated label created and when UPS receives the item they will update a delivery. We never got an update. then we get the survey asking how we like the product. The customer service is terrible. This is a one and done seeing the first part of the order for the jarred items took over 3 weeks to get and when we spoke to them, it was excuse after excuse.

Shipping issues
The Chili's are alway great tasting, but our last order shipped on a Thursday morning and did not get delivered until 5:00pm the following Monday. They sat at the UPS depot from that Friday until delivered. The temp here that weekend was over 110 and they did not have a chance. Many of the chili's were rotten and spoiled, the remainder were shrivelled up and rubbery. We did manage to salvage a few pounds and the flavor is amazing like always.
Box broken, poor updates on order. Order shoukd hace arrived in 2 days nit 4 days

Absolutely love the Sandia Select - Fresh Hatch Green Chiles! Roasted them a couple weeks ago
Absolutely love the Sandia Select - Fresh Hatch Green Chiles! Roasted them a couple weeks ago. Added them to Buffalo Chicken dip and chilli. Always on the sandwiches that I make for lunch. The heat is not melt-you-face, but it’s got some kick!
Fantastic
I’m a chili head but I’m new to Hatch chiles. I roasted half of them and fermented the other half and made a hot sauce with them. Both fantastic. The heat is great, and the flavor profile is just so unique. There’s really nothing like it.
Quality Control?
Not as hot as the Hatch Hot that that I purchased at a Wegman's in North Carolina.
Nice chilis, delicious and easy peeling
Nice chilis, Took me right back to my grandmas kitchen in southern Colorado. Easy to peel as well. Roasted them on my grill so the whole process was easy peasy. And those are no sissy chilis. Absolutely appropriate heat there

Chile was not fresh nor was it the slightest bit hot
Warning: Green Chiles May Cause Happy Dancing 🔥 🕺
Having lived in West Texas for years, green chile wasn’t just food, it was its own spot on our food pyramid. We knew Hatch green chile peppers and loved them. When we relocated to Colorado, we kept the tradition alive; however, there was a difference, we missed Hatch. Now living in the Southeast, we had to start ordering them. We ordered for years from several places and was never happy with the quality and taste. Then one day, we saw Randy and The Fresh Chile Company. Game. Changer. We ordered. I roasted my first batch at home and, bam 25 years of searching ended with one bite. These Hatch green chiles are hands down the best I’ve had in decades. Eat them raw, roasted, on a sandwich, in a pot of green chile, over a hotdog, in soup, or (let’s be honest) straight from the box… every way is a win. Pro tip: just be prepared, they may cause spontaneous happy dancing in your kitchen. 💃🕺
I’m Impressed
This is the first time I have had fresh green chili delivered. I usually drive out to one of our local farms and purchase my chili already roasted. Well let me tell you I will be purchasing my chili from Fresh Chili from now on. The chili was fresh, clean (even though I rinsed them before roasting}, plump and meaty with just the right heat. I roasted them the way I wanted them roasted not relying on someone else to determine how they were roasted. This was my first time roasting chili on my grill. It was easy. I’m very happy with this choice and my dinner was absolutely delicious.

Hatch native explains authenticity and heat differences of Sandia and Big Jim
There is a HUGE disparity from the HEB, Central Market "Hatch Green Chile" items you find at the store vs the actual food you find in Hatch and across New Mexico. The new mexican food puts the "Hatch Chile" items to shame. As the article said, in Hatch we differentiate the chile by names, such as Sandia and Big Jim. The names will tell you how hot the chile peppers are, and good lord the peppers we get here in Texas are no where close to as hot as the peppers that are actually from Hatch.

Sandia variety described as traditional hot chile for roasting and ristras
Sandia is another super famous variety, especially for red chile. It is the traditional hot chile in New Mexico, but it is less common to use for chile roasting in recent years than another variety, known as Ms Junie. Sandia is still the main chile to tie into chile ristras though!
