Big Jim from Diaz Farms and Hatch Farms for roasting and freezing
My wife when a youngster lived closer to Deming. Big Jim from diaz farms..When older and we where together and in Arizona would get sacks for freezing after roasting. Plus hotter and mild for our then young son off of Hatch Farms. But Deming also has or had good chile

Roasted Big Jim flavor and texture description
About the same as what you'd find in store-bought Hatch peppers. So pretty thick and meaty! The flavor came out great on these: they're really sweet and rich with a bit of fruitiness (especially in the riper ones) and a nice, smooth earthiness and almost a bit of butteriness.

Big Jim as Hatch Green Chile derivative
Here in New Mexico we just call em Green Chile! Specifically Hatch Green Chile. Although they're a Derivative of the big Jim\Anaheim. Great work!
